Pecan Pie problems, diagnosed

First separate “warm and not finished setting” from truly underbaked. King Arthur pecan-pie recipes call for a center that may wobble slightly but is no longer liquid, followed by complete cooling before slicing. If the center sloshed when the pie came out, it needed more oven time; if it only seemed loose while warm, cooling may be the missing step.
