Pumpkin Pie problems, diagnosed

Pumpkin pie cracks mainly when its egg custard is overcooked. The key clue is the center at removal: King Arthur says the edges should be set while a broad center area still jiggles. If you wait until the center is firm, residual heat can keep tightening the eggs and cracks may appear in the oven or while the pie cools.
