Bagels problems, diagnosed

Start with preshaping and proof. King Arthur's bagel testing identifies a tight preshape as the best defense against wrinkled bagels and warns that overproofed bagels can deflate in the water bath. If the shaped rings are very puffy and delicate before boiling, or they collapse while being transferred, reduce proofing and handle them more gently before changing the recipe.
