What went wrong?
Uneven air-fryer cooking usually comes from crowding, not shaking or flipping, unequal piece size, different starting temperatures or a repeatable basket hotspot. Start with airflow and piece size before adding more time to everything.
Air-fryer breading usually blows off when crumbs are loose, the food surface is too wet, the coating has not rested or frozen, oil spray is too forceful, or the food is moved before the crust sets.
Air fryer smoke is usually caused by hot rendered fat, old grease residue, loose breading, wet splatter or lightweight food reaching the upper heating area. Stop the cook if smoke is heavy or abnormal and correct the safe, observable cause before continuing.
