Breaded Chicken problems, diagnosed

First identify when the coating failed. If it slid or shed in the oil, check surface moisture, the flour-binder-crumb sequence, excess flour, oil-temperature recovery, crowding and early handling. If the crust stayed intact through frying but later lifted in sheets or softened and slid after resting or saucing, the problem is different: the coating may not have bonded firmly before frying, or moisture reached the crust after cooking. The most useful clue is timing — before frying, in the oil, or after the chicken came out.
