Check batter rest, thickness and cooking time before blaming the recipe. Crêpe batter is supposed to be thin and well hydrated, and several tested recipes rest it before cooking. If the batter is too thick or the pan is too cool, each crêpe stays on the heat longer and can become leathery. A rested, thin batter cooked quickly in a properly heated pan is the better baseline.
