Omelette problems, diagnosed

For a classic French-style omelette, browning and rubberiness usually mean the eggs spent too long over too much heat. If brown patches form before the center is creamy, lower or lift the pan and keep the eggs moving earlier in the cook. If the exterior stays pale but the whole omelette is firm and bouncy, the stronger clue is simply overcooking.
