Poached Eggs problems, diagnosed

Use the appearance of the white as the first clue. If it explodes into wispy threads as soon as it enters the water, egg freshness and water movement are the strongest suspects. Fresh eggs have a thicker white that stays closer to the yolk. A gentle simmer, a controlled transfer from a ramekin and a small amount of vinegar can all help the white set before it disperses.
