Scrambled Eggs problems, diagnosed

Rubbery scrambled eggs are usually overcooked. If the curds become firm, dry and squeaky while liquid collects in the pan, the egg proteins have tightened too far and squeezed out moisture. Gentle heat and removing the eggs while they are still slightly softer than the final target are the main controls.
