Chicken Wings problems, diagnosed

Start with surface moisture and airflow. Wings crisp when the skin is dry, hot air can circulate around the pieces and rendered fat can escape. Food Network recommends drying wings thoroughly, spacing them so they do not steam each other and, in several baked-wing methods, using baking powder to speed browning and crisping. Toss wet sauce on only after the wings are crisp.
