Pork Ribs problems, diagnosed

First check whether the meat still resists when you pull or bite it. Pork ribs contain connective tissue that needs enough effective low-and-slow cooking to soften. If the ribs are still firmly attached and resist tearing, they usually need more appropriate cooking time. If they already separate easily but feel dry and stringy, more cooking is the wrong rescue.
