Birria problems, diagnosed

Tough birria usually needs more gentle braising time. Chuck and short ribs should cook until a fork slides in easily and the fibers separate with little resistance. A hard boil, a very lean cut, uneven pieces or a braise that dries out can also keep the meat firm.
