Baked Potato problems, diagnosed

A hard center usually means the potato is simply not done yet. Food Network's baked-potato guidance says the center should feel soft and a fork or knife should slide in easily; if it does not, return the potato to the oven and check again. Large potatoes, multiple potatoes in the oven, a cooler-than-expected oven or too little cooking time can all delay the center.
