French Fries problems, diagnosed

Soggy fries either never formed a dry crust or formed one and then lost it. If they are pale, limp and greasy from the fryer, check oil temperature, batch size and surface moisture. If they were crisp at first and softened later, check draining, stacking, covering and holding.
