Gnocchi problems, diagnosed

The fastest check is whether the gnocchi survive the pot. If they dissolve or shed into the water, the dough did not have enough stable structure for its moisture level or the water was too aggressive. If they hold perfectly but eat dense, dry or chewy, the problem is the opposite: too much flour or too much handling.
