Hash Browns problems, diagnosed

Soggy hash browns usually come down to moisture, thickness, pan heat or timing. If they never form a crust, check how dry the shredded potatoes were and whether the pan was hot enough. If the outside browns while the center stays wet, check thickness. If the patty falls apart, the problem is more likely structure and flipping than simple sogginess.
