Potato Salad problems, diagnosed

Start with the potatoes themselves. Reliable Food Network methods drain them thoroughly, often return them to a warm pot or let them steam-dry, and then add dressing only after excess surface water is gone. If the potatoes went straight from boiling water into a mayonnaise dressing, or were cooked until breaking down, the salad can become loose. Also check whether extra watery ingredients or an overly thin dressing changed the liquid balance.
