Method

Prepare the pans

  1. Heat the oven to 350°F / 177°C. Grease two 9-inch round pans, line the bottoms with parchment and lightly grease the parchment.

Mix the batter

  1. Whisk oil, sugar, eggs, salt, spices and leaveners until smooth. Add the weighed flour and stir just until no dry streaks remain.

Fold in carrots and nuts

  1. Fold in the finely grated carrots and toasted walnuts until evenly distributed.

Bake and cool

Frost
