Method
Cook by the cues, not just the clock
Sear beef briefly
Season the beef. Heat one tablespoon oil over high heat and sear in a single layer just until browned outside but not fully cooked. Transfer to a plate.
Brown mushrooms and onion
Add the remaining oil and butter. Cook the mushrooms and onion until the mushrooms lose moisture and both are well browned; add garlic for the last 30 seconds.
Build and reduce sauce
Stir in the flour, then whisk in the broth, Dijon and Worcestershire. Simmer until the sauce visibly coats a spoon.
Temper sour cream
Put sour cream in a heatproof bowl and gradually whisk in about a cup of the warm sauce. Remove the skillet from high heat, then stir the tempered mixture back in.
Return beef gently
Return the beef, juices and mushrooms. Warm over medium-low just until the beef is done and the sauce is hot. Serve over egg noodles with parsley.
