  • 2 carrots, cut into large chunks
  • 3 cloves garlic, smashed

Base

  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 355 ml dark ale or low-sodium beef broth — About 1 1/2 cups.

Herbs

  • 4 sprigs fresh thyme

Finish

  • 2 tbsp chopped parsley

Method

Brown short ribs

  1. Pat ribs dry, season well, and brown in batches in a hot skillet until several sides are deeply colored.

Build the cooker

  1. Place onion, carrots and garlic in the slow cooker, set the ribs on top, and add Worcestershire, Dijon, ale or broth and thyme.

Cook low and slow

  1. Cover and cook on LOW for about 7 to 8 hours, checking near the end for fork tenderness.

Separate fat from juices

  1. Move ribs to a warm platter. Strain the cooking liquid if desired and skim or spoon off excess surface fat before serving.

Serve at the tender point

  1. Return enough hot cooking liquid to keep the ribs moist and finish with parsley.
