Dry

  • 240 g all-purpose flour — About 2 cups.
  • 35 g granulated sugar — About 3 tablespoons.
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp fine salt

Wet

  • 1 large egg
  • 454 g buttermilk — About 2 cups.
  • 28 g unsalted butter, melted and cooled slightly — Vegetable oil also works.
  • 1 tsp vanilla extract — Optional.

Method

Cook by the cues, not just the clock

Mix dry ingredients

  1. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl until evenly distributed.

Combine wet ingredients

  1. Whisk the egg, buttermilk, melted butter and vanilla in a second bowl until homogeneous.

Make batter gently

  1. Pour the wet mixture into the dry mixture and fold or stir only until no large streaks of dry flour remain. Small lumps are fine.

Rest and heat griddle

  1. Rest the batter uncovered for about 15 minutes while heating a skillet over medium heat or an electric griddle to about 175°C / 350°F. Grease lightly.

Cook

  1. Scoop about 60 ml / 1/4 cup batter per pancake. Cook until bubbles form and the underside is browned, about 1 to 2 minutes, then flip once and cook the second side until golden.
