Method

Heat and assemble

Cover tightly

  1. Cover the dish tightly with foil and bake for about 35 minutes.

Check rice and chicken

  1. Carefully uncover. The rice should be nearly tender and most liquid absorbed. Stir once, sprinkle with cheese and return uncovered for 10 to 15 minutes, until the center is hot and the chicken reaches at least 165°F / 73.9°C.

Rest before serving

  1. Rest 5 to 10 minutes, then finish with the remaining scallions.
