Before you start
What this method is trying to achieve
A reliable green bean casserole is thick before it enters the oven. Cook mushroom liquid away, drain the beans thoroughly and simmer the flour-based sauce until it coats a spoon. The oven should heat and marry a sauce that already has body rather than rescue a watery one.
Success looks like
Know the target before you cook
The beans should be tender, the mushroom sauce thick enough to coat them and the fried-onion topping crisp and browned.
Ingredients
What you need
Beans
- 680 g fresh green beans, trimmed and halved — about 1 1/2 lb
Sauce
- 4 tbsp unsalted butter
- 1 yellow onion, finely diced
- 340 g cremini mushrooms, sliced — about 12 oz
- 2 cloves garlic, minced
- 4 tbsp all-purpose flour
- 2 cups low-sodium chicken or vegetable broth
- 3/4 cup heavy cream
Seasoning
- 1 1/2 tsp kosher salt
- 1/2 tsp black pepper
Finish
- 2 cups crispy fried onions, divided
Method
Cook by the cues, not just the clock
Blanch and drain the beans
Heat the oven to 375°F / 190°C. Boil the green beans until crisp-tender, then drain thoroughly and let them sit in the colander while the sauce is made.
Reduce the mushrooms
Melt butter in a large skillet. Cook onion until softened, then add mushrooms and garlic. Continue until the mushrooms are tender and most released liquid has evaporated.
Build a thick sauce
Sprinkle flour over the vegetables and cook for 1 minute. Gradually whisk in broth, then cream. Simmer until the sauce clearly thickens and coats the back of a spoon.
Assemble and bake
Fold in the drained beans and half the crispy onions. Transfer to a 3-quart baking dish and bake until hot and bubbling, about 15 to 20 minutes.
Finish the topping
Top with the remaining crispy onions and bake 5 more minutes, just until the onions are hot and crisp.
Critical checkpoints
Stop here and check
Before sauce: mushroom liquid gone?
Most released mushroom liquid has evaporated from the skillet.Keep sautéing before adding flour if the pan is still watery.
Before assembly: sauce coats a spoon?
The sauce is thickened-cream consistency rather than broth-like.Do not depend on the oven to create all the thickening.
At serving: coated beans, not pooled liquid?
The sauce clings to the beans and does not run into a watery puddle.Use the watery green bean casserole diagnosis if free liquid remains.

After cooking
Storage, reheating & substitutions
Storage
Cool promptly and refrigerate covered. Store extra crispy onions separately if possible.
Reheating
Reheat the casserole until hot and bubbly, then add or refresh the crispy onion topping near the end.
Substitutions
Frozen green beans can work if fully thawed and drained. Avoid adding their thawing liquid to the sauce.
