Method

Roast the sweet potatoes

  1. Heat the oven to 400°F / 205°C. Pierce the sweet potatoes and roast until very tender, about 45 to 60 minutes. Cool enough to handle.

Make the filling

  1. Reduce the oven to 350°F / 175°C. Scoop the flesh into a bowl and mash smooth. Mix in eggs, melted butter, milk, brown sugar, vanilla, salt, cinnamon and nutmeg.

Build the streusel

  1. Mix pecans, brown sugar and flour, then cut in cold butter until coarse crumbs form.

  1. Spread the filling in a buttered 2-quart baking dish, add the topping and bake 30 to 35 minutes, until the center is mostly set and slightly puffed.
