Method

Cook vegetables
Cook onion, carrot, celery, mushrooms and pepper until softened.
Deglaze
Add wine and scrape the browned fond.
Braise
Add tomatoes, return chicken and cook covered until tender.
Reduce and serve
Uncover near the end and reduce until the sauce coats the chicken.
