Before you start
What this method is trying to achieve
Crispy wings are mostly a moisture-and-airflow problem. Dry the wings thoroughly, keep them in a single layer with space around each piece and use a rack so rendered fat can drip away. A small amount of aluminum-free baking powder helps the skin brown and crisp. Add wet sauce only after the wings have finished crisping.
Success looks like
Know the target before you cook
The wings should be deeply browned with crisp skin, rendered rather than rubbery fat, and fully cooked meat that stays juicy near the bone.
Ingredients
What you need
Wings
- 1.13 kg chicken wings, split into flats and drumettes, tips removed — about 2 1/2 lb
Crisping
- 2 tsp aluminum-free baking powder
Seasoning
- 1 1/2 tsp kosher salt
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper, freshly ground
Finish
- 1 tbsp finely chopped parsley, optional
Method
Cook by the cues, not just the clock
Dry the wings
Pat the wings very dry on every side. For even better surface drying, place them uncovered on a rack in the refrigerator for at least 1 hour before cooking.
Season for crisping
Heat the oven to 425°F / 220°C. Toss the dry wings with baking powder, salt, paprika, garlic powder, onion powder and black pepper until the coating is thin and even.
Arrange for airflow
Set a wire rack over a rimmed sheet pan. Arrange the wings in one layer with open space around each piece.
Bake until crisp and safe
Bake for about 40 to 50 minutes, turning the wings once and rotating the pan if your oven browns unevenly. Continue until the skin is deeply browned and crisp and the thickest pieces reach at least 165°F / 73.9°C.
Rest briefly and sauce last
Rest the wings for about 5 minutes on the rack. Serve as dry-seasoned wings, or toss with a small amount of warm sauce immediately before serving.
Critical checkpoints
Stop here and check
Before baking: is the skin actually dry?
The wing skin looks matte with no beads of water or wet marinade.Pat dry again or air-dry briefly before adding the baking-powder seasoning.
Mid-bake: are the wings steaming each other?
Each wing has open space around it and rendered fat is dripping below the rack rather than pooling around the skin.Spread the wings farther apart or split them between pans if they are crowded.
Finish: crisp skin and safe center?
The exterior is deeply browned and crisp, while the thickest pieces read at least 165°F / 73.9°C.Use the linked CookClue diagnosis if the wings are safely cooked but the skin stays soft or soggy.

After cooking
Storage, reheating & substitutions
Storage
Cool leftovers promptly and refrigerate covered. For best texture, keep heavily sauced leftovers separate from any extra sauce when practical.
Reheating
Reheat wings in a hot oven or air fryer in a single layer until hot and the skin re-crisps. Avoid the microwave when crisp skin is the priority.
Substitutions
Use aluminum-free baking powder, not baking soda. A convection oven can crisp faster, so begin checking early.
