Ingredients

What you need

Cream

  • 6 large egg yolks
  • 200 g granulated sugar
  • 300 ml heavy cream, cold
  • 340 g mascarpone, softened
  • 1 tsp vanilla extract

Coffee soak

  • 600 ml strong brewed coffee or espresso, cooled
  • 45 ml cognac or dark rum — optional

Assembly

  • 50 ladyfinger cookies

Finish

  • 3 tbsp unsweetened cocoa powder
  • 110 g semisweet chocolate, finely grated

Method

Prepare ladyfingers

  1. If using soft ladyfingers, dry them briefly in a low oven and cool completely before assembly.

Make mascarpone cream

  1. Whisk the yolks with part of the sugar over barely simmering water until warm, pale and thickened, then cool. Whip the cream with vanilla and remaining sugar to stiff peaks and gently mix in mascarpone and the cooled yolk mixture.

Prepare the soak

  1. Combine cooled coffee with cognac or rum if using.

Layer

  1. Dip each ladyfinger very briefly in the coffee, arrange in the dish, spread with half the mascarpone cream and dust with cocoa. Repeat with a second layer.

Chill and serve

  1. Cover and refrigerate at least overnight, preferably about 24 hours. Finish with cocoa and grated chocolate before slicing.
