Panna cotta
- 240 ml whole milk
- 1 tbsp unflavored powdered gelatin
- 720 ml heavy cream
- 110 g honey
- 1 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 pinch kosher salt

- 250 g mixed fresh berries
Method
Cook by the cues, not just the clock
Bloom gelatin
Place the cold milk in a bowl, sprinkle gelatin evenly over the surface and let stand 5 to 10 minutes.
Warm cream
Heat the cream, honey, sugar, vanilla and salt until hot and the sweeteners dissolve, but do not keep it at a hard boil.
Dissolve gelatin
Whisk the bloomed gelatin and milk into the hot cream until completely dissolved.
Fill and cool
Divide among 6 glasses or lightly oiled ramekins, cool slightly and refrigerate undisturbed.
Chill and serve
Chill at least 6 hours, then top with berries or unmold carefully if the set is firm enough.
