  • 285 g frozen leaf spinach, thawed and squeezed very dry
  • 400 g canned artichoke hearts, drained well and chopped
  • 55 g whole-milk mozzarella, shredded
  • 70 g Parmesan, finely grated

  • 0.25 tsp black pepper

Prepare

  1. Heat the oven to 350°F / 177°C and lightly grease a 1-quart baking dish.

Dry the vegetables

  1. Wrap the thawed spinach in a clean towel and twist firmly to remove as much water as possible. Drain the artichokes thoroughly and chop them.

Mix the base

  1. Stir the cream cheese, sour cream, mayonnaise and garlic until smooth, then fold in the spinach, artichokes, mozzarella and most of the Parmesan. Season with salt and pepper.

Bake

  1. Spread into the dish, top with the remaining Parmesan and bake until bubbling, about 20 to 25 minutes.

Brown and serve

  1. Broil briefly until the top is golden, watching closely, then serve warm with crackers or bread.
