Before you start
What this method is trying to achieve
Drain the buttermilk well, build distinct coating layers and work in batches. The rings need exposed airflow and a coating that is firmly attached before the fan starts.
Success looks like
Know the target before you cook
The onion should be tender inside while the coating stays dry, golden and attached around the full ring.
Ingredients
What you need
Onions
- 1 large sweet onion, sliced into thick rings
Soak
- 0.5 cup buttermilk
Breading
- 0.5 cup all-purpose flour
- 1 large egg, beaten with a splash of water
- 1 cup panko breadcrumbs
Seasoning
- 1 tsp kosher salt
Finish
- 1 nonstick cooking spray, as needed
Method
Cook by the cues, not just the clock
Soak
Separate onion rings and soak briefly in buttermilk.
Set up coating
Place flour, beaten egg and panko in separate shallow bowls.
Bread
Drain each ring, coat in flour, then egg, then panko, pressing the crumbs around the full ring.
Air fry in batches
Preheat to 375°F / 191°C. Arrange one layer, mist lightly and cook about 10 minutes, flipping halfway, until golden.
Serve
Serve immediately with dipping sauce.
Critical checkpoints
Stop here and check
Before breading: excess buttermilk drained?
The onion is damp but not dripping.Let excess buttermilk fall away before flour.
Basket check: single layer?
Rings do not overlap heavily.Cook in batches.
Coating blowing off?
Crumbs or coating detach under the fan or during the first flip.Use air-fryer-breading-blowing-off to check adhesion, surface moisture, spray and handling.

After cooking
Storage, reheating & substitutions
Storage
Refrigerate leftovers promptly; onion rings are best immediately.
Reheating
Re-crisp in the air fryer for a few minutes; do not microwave if crispness matters.
Substitutions
Regular panko can replace gluten-free panko; use all-purpose flour in place of potato flakes if gluten-free cooking is not required.
