Sliced medium-rare air fryer steak with a dark browned crust, rosy center and melting garlic-herb butter on a neutral ceramic plate

Before you start

What this method is trying to achieve

Use a steak close to one inch thick, let the chill come off briefly, preheat the air fryer, then cook to actual doneness rather than extending every piece by the same timer.

Success looks like

Know the target before you cook

The steak should be deeply browned outside, evenly pink to the intended doneness inside and juicy after resting.

Ingredients

What you need

Steak

  • 1 lb sirloin steak, about 1 inch thick

Seasoning

  • 1 tsp kosher salt
  • 0.5 tsp black pepper

Butter

  • 4 tbsp unsalted butter, softened
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 clove garlic, finely grated

Method

Cook by the cues, not just the clock

Temper

  1. Let the steak sit out briefly while the air fryer preheats.

Preheat and season

  1. Preheat the air fryer to 400°F / 204°C. Season both sides evenly with salt and pepper.

Air fry

  1. Place the steak in the center of the basket and cook, checking doneness around 10 minutes and extending only as needed.

Rest

  1. Transfer to a board and rest about 10 minutes.

Finish

  1. Mix butter with parsley, chives and garlic; slice the steak against the grain and top with the herb butter.

Critical checkpoints

Stop here and check

other

Thickness check

The steak is close to one inch thick.

Adjust expectations if the steak is much thinner or thicker.

other

Doneness check

The center reaches the intended doneness before the exterior dries out.

Remove the steak rather than adding time to match a fixed timer.

other

One side or section lagging?

Parts of the steak are noticeably less cooked than others.

Use air-fryer-food-cooks-unevenly to check load, position, thickness and starting temperature.

Storage, reheating & substitutions

Storage

Refrigerate cooked steak promptly in a covered container.

Reheating

Reheat gently and briefly to avoid pushing the center past the desired doneness.

Substitutions

Ribeye or New York strip of similar thickness can be used; timing will vary with thickness and fat content.
