Method

Portion the beef

  1. Divide the cold beef into eight loose balls without compacting them.

Heat the griddle

  1. Preheat a cast-iron griddle or skillet over high heat until very hot.

Smash immediately

  1. Place two balls on the hot surface, cover each with parchment and press firmly to about 1/4 inch / 6 mm thick. Season.

Brown and flip

  1. Cook undisturbed until the first side is deeply browned and crisp at the edges, about 1.5 to 2 minutes. Scrape and flip, top with cheese, and cook the second side briefly.

Stack and serve

  1. Stack two patties per toasted bun with sauce and pickles. Verify ground beef reaches at least 160°F / 71.1°C before serving.
