Beef

  • 1200 g beef chuck roast, cut into large even chunks

Sauce

  • 4 dried guajillo chiles, stemmed and seeded
  • 3 dried ancho chiles, stemmed and seeded
  • 2 dried chiles de árbol, stemmed and seeded — optional for heat
  • 3 Roma tomatoes, halved
  • 1 white onion, quartered
  • 6 cloves garlic

Braise

  • 950 ml beef broth
  • 2 tbsp apple cider vinegar
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1 tsp kosher salt — plus more to taste

Tacos

  • 16 small corn tortillas
  • 300 g Oaxaca, mozzarella or Monterey Jack cheese, shredded

Finish

  • 80 g white onion, finely diced
  • 20 g fresh cilantro, chopped
  • 2 limes, cut into wedges

Method

Cook by the cues, not just the clock

Make the chile base

  1. Toast the dried chiles briefly in a dry pan, then soak them in hot water until softened. Blend with tomatoes, onion, garlic and some broth until smooth.

Brown and braise

  1. Season the beef, brown it in batches in a Dutch oven, then add the blended sauce, remaining broth, vinegar, cumin, oregano and bay leaves. Bring only to a gentle simmer, cover and braise in a low oven until very tender.

Check tenderness

  1. After about 3 hours, test the thickest beef piece with a fork. Continue braising if it still resists, then shred the beef and keep it moist with a little consommé.

Assemble tacos

  1. Skim a little red fat from the consommé. Dip each tortilla lightly, place on a medium-hot griddle, add cheese and shredded beef, then fold.

Crisp and serve

  1. Cook until crisp on both sides, then serve immediately with diced onion, cilantro, lime and warm consommé.
