  • 150 g corn kernels
  • 120 g chopped green chiles, drained

  • 0.5 tsp kosher salt

  • 12 corn tortillas
  • 480 ml red enchilada sauce
  • 180 g Cheddar-Jack cheese, shredded

  • 2 tbsp fresh cilantro, chopped

Method

Make the filling

  1. Cook the onion and garlic in oil until softened. Add corn, green chiles, cumin and chicken and cook until the mixture is hot and any loose liquid has evaporated.

Warm tortillas

  1. Warm the corn tortillas briefly until flexible, keeping them covered as you work.

Roll

  1. Spread a thin layer of enchilada sauce in the baking dish. Add a moderate amount of chicken filling to each tortilla, roll and place seam-side down.

Sauce and bake

  1. Spoon the remaining sauce over the rolls without drowning them, top with cheese and bake at 350°F / 177°C until hot and the cheese melts, about 15 to 20 minutes.

Rest and serve

  1. Rest uncovered for 5 minutes, add cilantro and serve.
