Before you start
What this method is trying to achieve
The filling is the first texture checkpoint. Cook or reheat the chicken mixture until no free liquid remains, then use a moderate amount so the tortilla sits flat against the skillet and browns before steam softens it.
Success looks like
Know the target before you cook
The tortillas should be crisp and golden outside with fully melted cheese and a moist but non-watery chicken filling.
Ingredients
What you need
Filling
- 300 g cooked chicken, shredded or diced
- 100 g diced tomatoes with green chiles, well drained
- 2 tbsp sliced pickled jalapeños, drained
Assembly
- 4 large flour tortillas
- 220 g Monterey Jack or Cheddar-Jack cheese, shredded
Cooking
- 2 tbsp butter or neutral oil
Serving
- 120 g fresh salsa, drained if very watery
- 1 avocado, sliced
- 1 lime, cut into wedges
Method
Cook by the cues, not just the clock
Dry the filling
Warm the chicken with the drained tomatoes and jalapeños until hot and no loose liquid remains.
Fill
Place chicken and cheese over half of each tortilla, leaving a border around the edge, then fold.
Preheat skillet
Heat a skillet over medium to medium-high heat and add a thin film of butter or oil.
Cook
Cook each quesadilla until golden underneath, flip once and cook until the second side is golden and the cheese is melted.
Rest and serve
Move to a cutting board uncovered for 1 minute, cut into wedges and serve with salsa, avocado and lime.
Critical checkpoints
Stop here and check
Filling before assembly: no free liquid?
The chicken mixture is moist but not watery.Reduce or drain before putting it on tortillas.
Skillet stage: tortilla browning before steaming?
The underside develops even golden patches within a few minutes.Adjust heat if the cheese melts but the tortilla remains pale.
Quesadilla soggy?
The tortilla is floppy or wet instead of crisp and golden.Use quesadilla-soggy to check filling moisture, skillet heat, filling amount and post-cook steam.

After cooking
Storage, reheating & substitutions
Storage
Refrigerate leftover chicken filling separately when possible. Cooked quesadillas soften in storage.
Reheating
Reheat in a skillet or moderate oven so the tortilla can re-crisp; avoid covered steaming.
Substitutions
Use flour or sturdy corn tortillas. Monterey Jack, Cheddar or Oaxaca-style cheese all melt well.
