Rice

  • 300 g long-grain white rice

Tomato base

  • 225 g Roma tomatoes, roughly chopped
  • 0.5 small white onion, roughly chopped
  • 2 cloves garlic

Cooking

  • 3 tbsp vegetable oil
  • 700 ml chicken or vegetable broth
  • 1 tsp kosher salt

Optional vegetables

  • 60 g carrot, small dice
  • 60 g zucchini, small dice

Finish

  • 2 tbsp fresh cilantro, chopped

Method

Rinse and drain

  1. Rinse the rice thoroughly, then drain until water is no longer clinging heavily to the grains.

Blend tomato base

  1. Blend tomatoes, onion and garlic until smooth.

Toast rice

  1. Heat the oil in a heavy saucepan and cook the drained rice, stirring occasionally, until lightly golden.

Cook gently

  1. Add the tomato puree and cook until absorbed, then add broth, salt and optional vegetables. Bring to a simmer, reduce heat and cook gently until most liquid is absorbed and small steam holes appear.

Rest and fluff

  1. Cover, cook on very low heat for 5 minutes, remove from heat and rest covered 10 minutes. Fluff gently with a fork and finish with cilantro.
