  • 450 g prepared pizza dough, at room temperature

Filling

  • 225 g whole-milk ricotta, drained
  • 225 g low-moisture mozzarella, shredded
  • 35 g Parmesan, finely grated
  • 20 g fresh basil, chopped
  • 150 g cooked sausage, pepperoni or sautéed vegetables, cooled and drained

Seal

  • 1 large egg, beaten

Finish

  • 1 tbsp olive oil

Serve

  • 250 g thick marinara sauce, warmed

Method

Prepare filling

  1. Mix ricotta, mozzarella, Parmesan and basil; fold in cooked, cooled and well-drained fillings.

Divide and relax dough

  1. Divide dough into four pieces, cover and rest briefly if it resists shaping.

Shape and fill

  1. Stretch each piece to a 7- to 8-inch round of even thickness. Place filling on one side, leaving a clean 1/2- to 3/4-inch border.

Seal and vent

  1. Brush the border lightly with egg, fold the dough over, crimp firmly and cut 1 or 2 vents in the top. Brush with olive oil or egg wash.

Bake

  1. Bake at 450°F / 232°C until deeply golden and cooked through, about 18 to 22 minutes. Rest briefly and serve with marinara.
