  • 1 pizza dough ball, about 280 to 340 g, at room temperature

Sauce

  • 200 g whole peeled tomatoes, crushed and drained lightly
  • 1 tbsp extra-virgin olive oil
  • 0.5 tsp kosher salt

Topping

  • 115 g fresh mozzarella, well drained and torn
  • 20 g Parmesan, finely grated

Finish

  • 8 fresh basil leaves
  • 1 tsp extra-virgin olive oil

Method

Preheat

  1. Place a pizza stone or steel on a center rack and preheat the oven at 475°F / 246°C or as hot as the equipment allows for at least 45 to 60 minutes.

Prepare toppings

  1. Crush and lightly drain the tomatoes; season with olive oil and salt. Drain and tear the mozzarella.

Shape

  1. Stretch the rested dough into about a 12-inch round, preserving a slightly thicker rim.

Top and bake

  1. Spread a light tomato layer, add mozzarella and Parmesan, then bake until the bottom is browned, rim blistered and cheese melted.

Finish

  1. Add fresh basil and a small drizzle of olive oil after baking, then rest 1 to 2 minutes before slicing.
