Before you start

What this method is trying to achieve

Air fryers give baked potatoes strong dry airflow, which helps the skin crisp while the center softens. Use similar-size russets, keep space around each potato and judge doneness by the center rather than the clock.

Success looks like

Know the target before you cook

The skin should be dry and crisp, while a knife slides easily into the center and the inside opens fluffy rather than firm.

Ingredients

What you need

Potatoes

  • 2 whole medium russet potatoes, scrubbed and dried — about 225 g / 8 oz each

Seasoning

  • 2 tsp olive oil
  • 1/2 tsp kosher salt

Finish

  • 2 tbsp unsalted butter, optional
  • 2 tbsp sliced chives or scallions, optional

Method

Cook by the cues, not just the clock

Prep

  1. Preheat the air fryer to 400°F / 205°C if your model benefits from preheating. Prick each potato several times with a fork.

Season

  1. Rub the dry potatoes with olive oil and kosher salt.

Air fry

  1. Place the potatoes in the basket with space around them. Air fry for 40 to 45 minutes, turning once halfway through.

Check the center

  1. Insert a thin knife or skewer into the deepest part. Continue cooking in 5-minute intervals if the center still resists.

Open and serve

  1. Cut a slit along the top, push the ends inward to fluff the center and add butter or chives if desired.

Critical checkpoints

Stop here and check

visual

Basket: enough airflow?

The potatoes have open space around them rather than touching on all sides.

Cook in batches if needed.

visual

Mid-cook: skin drying and browning?

The skin looks dry, slightly blistered and more deeply colored.

Turn the potatoes and continue cooking.

texture

Finish: fully tender center?

A thin knife slides into the center with very little resistance.

Use the linked diagnosis if the outside is ready but the middle remains hard.

Storage, reheating & substitutions

Storage

Cool promptly and refrigerate cooked potatoes covered. Do not leave topped potatoes at room temperature for extended periods.

Reheating

Reheat in the air fryer until hot so the skin has a chance to re-crisp.

Substitutions

Medium russet potatoes give the fluffiest result. Larger potatoes need more time; waxier varieties stay denser inside.
