Seasoning

  • 2 tbsp apple cider vinegar

Dressing

  • 180 g mayonnaise
  • 60 g sour cream
  • 1 1/2 tbsp yellow mustard
  • 2 tbsp pickle brine

Mix-ins

  • 2 stalks celery, finely chopped
  • 3 scallions, thinly sliced
  • 3 tbsp dill pickles, finely chopped
  • 2 tbsp fresh parsley, chopped

  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp paprika, for serving

Method

Cook

  1. Place the cut potatoes in a saucepan, cover with cold water, season with salt, and bring to a gentle simmer. Cook 10 to 15 minutes until a knife enters easily but the pieces still hold their shape.

Drain and dry

  1. Drain thoroughly in a colander. Return the colander over the warm empty pot and cover loosely with a clean towel for 10 to 15 minutes so steam can leave the potatoes.

Season warm

  1. Transfer the warm potatoes to a bowl, drizzle with vinegar and a pinch of salt, and toss gently. Let cool until just warm.

Dress

  1. Whisk mayonnaise, sour cream, mustard and pickle brine. Fold into the potatoes with celery, scallions, pickles and parsley.

Chill and finish

  1. Cover and refrigerate at least 2 hours. Before serving, stir gently, taste for salt and pepper, and dust lightly with paprika.
