  • 600 g cold cooked long-grain rice, clumps broken apart

Chicken

  • 350 g boneless skinless chicken thigh or breast, small dice
  • 1 tsp toasted sesame oil

Stir-fry

  • 2 tbsp neutral oil

Egg

  • 2 large eggs, beaten

Vegetables

  • 1 small onion, finely chopped
  • 1 carrot, small dice
  • 100 g frozen peas, thawed

Aromatics

  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated

Seasoning

  • 2 tbsp soy sauce

Finish

  • 4 scallions, thinly sliced

Prepare rice

  1. Use cold cooked rice and break apart compacted clumps before the wok heats.

Cook egg

  1. Heat a little oil in the wok over high heat, quickly scramble the eggs until just set and transfer out.

Cook chicken

  1. Add oil and stir-fry the chicken until lightly browned and cooked through, then transfer temporarily if the pan is crowded.

Fry rice

  1. Cook onion, carrot, peas, garlic and ginger briefly, add the cold rice and spread it across the hot surface. Toss until very hot and some grains begin to toast, then add soy sauce.

Finish

  1. Return chicken and egg, toss until evenly hot and finish with scallions.
