Method
Cook by the cues, not just the clock
Cook the pasta
Boil the pasta in well-salted water until al dente. Drain promptly.
Make the dressing
Whisk olive oil, red wine vinegar, Dijon, garlic, oregano, salt and pepper until combined. Reserve about one-quarter of the dressing for the final toss.
Cool and combine
Let the pasta cool until no longer steaming, then toss with tomatoes, cucumber, bell pepper, red onion, olives, mozzarella and most of the dressing.
Chill
Cover and refrigerate for at least 30 minutes so the flavors combine.
Finish before serving
Toss with enough reserved dressing to restore a light glossy coating. Add parsley, taste and adjust salt and pepper.
