Method

Cook pasta
Boil the fettuccine in salted water until al dente. Reserve at least 240 ml / 1 cup pasta water before draining.
Warm cream and butter
While the pasta cooks, combine cream and butter in a wide skillet and bring only to a gentle simmer. Add nutmeg, salt and pepper, then reduce heat to low.
Add pasta
Transfer the hot drained fettuccine to the skillet and toss until the ribbons are coated in the warm cream mixture.
Add cheese

Adjust and serve
