Silky penne coated in orange-pink vodka tomato cream sauce with Parmesan and basil

Before you start

What this method is trying to achieve

Reduce the vodka before the dairy enters, lower the heat for the cream, then use pasta water only as needed to tune the coating consistency.

Success looks like

Know the target before you cook

The sauce should cling in a smooth orange-pink layer with no oily beads or dairy curds.

Reduce vodka

  1. Add vodka and simmer until the sharp alcohol aroma softens.

Add cream gently

  1. Lower the heat and stir in cream until the sauce is smooth.

Finish

  1. Toss in pasta, Parmesan and only enough pasta water to make the sauce cling.

Critical checkpoints

Stop here and check

temperature

Before cream: heat low?

The sauce is simmering gently, not boiling violently.

Lower the heat before adding dairy.

other

After cream: smooth emulsion?

No oil beads or curds are visible.

Remove from strong heat if separation starts.

other

Sauce splitting?

The sauce becomes oily, grainy or curdled.

Use vodka-sauce-split.
