Method

Dry spinach
Wilt the spinach, cool it and squeeze out as much liquid as possible.
Mix filling
Combine spinach, ricotta, cheeses and egg.
Assemble and bake
Spread thick sauce in the dish, fill the shells, cover with sauce and bake.
Rest
Let the dish stand about 10 minutes before serving.
