Glossy homemade cranberry sauce with whole berries and orange zest

Before you start

What this method is trying to achieve

The sauce should not be judged straight from the hot pan. Cook until most berries burst and the liquid becomes visibly syrupy, then cool and chill before deciding whether it needs further reduction.

Success looks like

Know the target before you cook

The finished sauce should be glossy, spoonable and thick enough to mound while still remaining saucy.

  • 300 g granulated sugar
  • 360 ml water

Boil then simmer

  1. Bring to a boil, reduce to a steady simmer and stir occasionally.

Watch the berries

  1. Cook until most cranberries burst and the liquid visibly thickens, about 15 to 20 minutes.

Cool

  1. Remove from heat and cool to room temperature.

Chill

  1. Refrigerate at least 4 hours before judging final consistency.

Critical checkpoints

Stop here and check

visual

Berries bursting?

Most berries have split and released their pulp.

Continue simmering if many are still firm and intact.

other

Cold texture set?

After chilling, the sauce mounds softly on a spoon.

Only then decide whether further reduction is needed.

other

Cranberry sauce runny?

The fully chilled sauce still pours like thin syrup.

Use cranberry-sauce-runny to check simmer time, liquid amount, cooling, overcooking and fruit ratio.

Storage, reheating & substitutions
