A whole turkey is two temperature zones in one bird. Track the breast and thigh separately, protect the breast if it browns ahead, and use 165°F / 73.9°C as the USDA-safe poultry endpoint.

The skin should be golden and crisp, the breast juicy rather than chalky and both breast and thigh safely cooked.

What you need

Turkey

  • 1 whole turkey, about 5.5 to 6.5 kg / 12 to 14 lb, thawed

Seasoning

  • 2 tbsp kosher salt
  • 1 tbsp freshly ground black pepper

Butter

  • 115 g unsalted butter, softened
  • 2 tbsp fresh sage, chopped
  • 2 tbsp fresh thyme, chopped

Aromatics

  • 1 yellow onion, quartered
  • 1 head garlic, halved
  • 1 lemon, halved

Method

Cook by the cues, not just the clock

Prepare

  1. Heat the oven to 325°F / 163°C. Pat the turkey dry, season inside and out and tuck onion, garlic and lemon loosely into the cavity.

Butter and roast

  1. Mix butter with sage and thyme, rub over the bird and place breast-side up on a rack.

Monitor both zones

  1. Begin temperature checks well before the expected finish. If the breast browns too quickly, cover it loosely with foil while the thighs continue.

Finish safely

  1. Continue roasting until breast and thigh readings each reach at least 165°F / 73.9°C in the appropriate thickest areas.

Rest and carve

  1. Rest 30 minutes before carving, then slice close to service.
