Patties
- 425 g canned salmon, drained very well and flaked
- 1 large egg, lightly beaten
- 70 g plain breadcrumbs — divided
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 2 tbsp fresh parsley or dill, chopped
- 1 tsp lemon zest
- 0.5 tsp Old Bay or similar seafood seasoning

- 2 tbsp olive oil

- 1 lemon, cut into wedges
Method
Cook by the cues, not just the clock
Mix
Combine the drained salmon, egg, about half the breadcrumbs, mayonnaise, Dijon, herbs, lemon zest and seasoning. Mix gently until it just holds together.
Shape
Form 8 even patties about 2 cm thick and press the remaining breadcrumbs lightly onto the outside.
Chill
Chill the formed patties for 10 to 15 minutes.
Pan-sear
Heat olive oil in a skillet over medium-high heat. Cook the patties until deeply golden on the first side, then flip once and brown the second side.
Serve
Transfer with a wide spatula and serve with lemon wedges.
