  1. Wash if needed, then dry the spears thoroughly. Toss with olive oil, salt and pepper.

Arrange

  1. Spread the asparagus in a single layer with tips generally facing the same direction for easier checking.

Roast

  1. Roast 8 to 14 minutes depending on thickness, checking early for pencil-thin spears. Turn once only if browning is very uneven.

Finish

  1. Transfer immediately and add lemon juice if desired. Serve hot or warm.
