Ingredients
What you need
Base
- 250 g dried chickpeas, soaked overnight, drained and rinsed
Herbs
- 30 g fresh parsley leaves, roughly chopped
Aromatics
- 1 small yellow onion, roughly chopped
- 3 cloves garlic, peeled
Seasoning
- 1.5 tsp ground cumin
- 1 tsp ground coriander
- 1.25 tsp kosher salt
Leavening
- 1 tsp baking powder
Binder
- 1 tbsp cornstarch, optional if the mixture feels loose
Frying
- neutral frying oil, enough for about 7 to 8 cm depth
Method
Cook by the cues, not just the clock
Drain
Drain the soaked chickpeas very thoroughly and pat away visible surface water.
Process
Pulse chickpeas, parsley, onion, garlic, cumin, coriander and salt until the mixture becomes a fine damp crumb that holds when firmly squeezed.
Rest
Mix in baking powder and, only if needed, cornstarch. Chill the mixture for 30 minutes.
Heat oil
Heat the frying oil to about 182°C / 360°F.
Fry
Form compact 30 g portions and fry in batches until deep golden and crisp, about 3 to 4 minutes, then drain on a rack or paper towels.

Oil is around 182°C / 360°F before each batch.Wait for the oil to recover before adding more falafel.

Storage, reheating & substitutions
Storage
Refrigerate cooked falafel promptly in a covered container for up to 3 days.
Reheating
Reheat in a hot oven or air fryer until warmed through and the exterior re-crisps.
Substitutions
Cilantro can replace part of the parsley. Do not substitute canned chickpeas if the goal is classic fried falafel texture.
